Out of curiosity, I'm wondering what people think a D700 file taken with a lens like the 14-24 2.8, and upresed to 21mp would compare like with a 5D MII file and the 16-35 2.8?
I guess I'm thinking these two cameras are competing on similar levels but with a big resolution difference and how good a lens must be to remove the difference.

The difference is pretty substantial, especially if you're talking about landscape images with lots of fine detail. The D700 files interpolated up to a size large enough for stock submission (17-18 mp) don't come even remotely close to the 21 megapixel Canons, no matter what lens you use... that's why I ended up selling my D700 and 14-24 f2.8G.
The only Nikon body with enough resolution to see any benefits from the newer Nikon lenses is the D3X.
