I was just asked a question, and I honestly don't know the answer to it.
I have a couple booking me, and the brides father is the one paying. So
on the contract, they want to know who has to sign.
Can the bride/groom sign, and I accept payment from a party (the parent)
that isn't on the contract?
YES, have the bride or groom sign. Payments can come from anyone.
You want to be legaly bound to bride or goom. If the father signs, and does not like the pictures, but the B&G do the Father can hold you over the coal.

Bride and groom. I'll accept one signature if getting the other will be a hassle due to distance or work, but it's preferable to have both. It doesn't matter who is paying the bill, my contract is with the bride and groom.
Bride AND Groom. If for some reason the couple break up before you deliver you should return money or products to both names addressed on the contract. Let them figure out who get's what.
Consider this, when someone buys a vehicle they could get money as a down payment from anyone. But who signs the contract for the vehicle? You betcha it's the person who owns the vehicle, not where the money is coming from.
You owe no one but your clients (bride & groom). These are adults regardless where the money is coming from.
