Just checked my D300 and D700, when I change aperture in LV mode, I need to leave LV and come back, for example touch MENU and half press shutter to come back to LV, then the LCD will be updated to show current DOF.

Is there a setting that I can set LV mode to automatically update LCD according to the real aperature?

BTW, my LV is set to tripod mode.

im not sure on those camera but on the d90 u can see it change.

The aperture closes down as your change the aperture, but only when using non-chipped lenses (AI-S, AI). Not sure why it doesn't work that way for chipped lenses, definitely a pain in the ass.

Think about it a bit. Say you want to shoot a 2s exposure at f/22. What exactly would live view show you? It is "live" because you don't have to wait for 2s for the shot to appear, it has to work with whatever ISO and aperture it can to get a decent "live" feed on the screen.

Generally yes it makes sense that it uses wide-open by default. But DoF preview is very useful in some situations - macro photography, for instance. Canon Live View system allows you to do this, and in fact EOS Utility allows you to permanently set DoF Preview on while shooting tethered (don't recall if Camera Control Pro 2 does). Presuming you have enough light in your shooting environment to use it, it's a good thing and as an option, it doesn't hurt anyone who doesn't want to use it. This is one of the many reasons I prefer Canon's Live View system which seems much better thought out.

No it cannot, but LV is great for toggling through the different WB settings to see which is best for the current situation

No. What I want to see is not what the image look like at the end, but rather what current DOF is. This has nothing to do with shutter speed. And the fact that I touch MENU and then go back to LV mode and it does show according the aperture setting indicates this is well doable. My question is whether I can setup so the cameras can automatically update the LCD instead of I need to go to other mode and come back to LV mode.
