Generally yes it makes sense that it uses wide-open by default. But DoF preview is very useful in some situations - macro photography, for instance. Canon Live View system allows you to do this, and in fact EOS Utility allows you to permanently set DoF Preview on while shooting tethered (don't recall if Camera Control Pro 2 does). Presuming you have enough light in your shooting environment to use it, it's a good thing and as an option, it doesn't hurt anyone who doesn't want to use it. This is one of the many reasons I prefer Canon's Live View system which seems much better thought out.
