I can't vouch for it because I just got it, but the "Illustrator CS3 Wow!" book is the only one that looked interesting to me.
I would choose carefully and avoid 90% of the books out there. They are simply regurgitated manuals, with absolutely no information that isn't already available to you.
I'd also consider using Lynda.com for training. You can join for as little as $25/month and you will learn far more than you can from buying a book. I used to have shelves full of "how to" books, but I've sold 90% of them and won't be buying more. the beauty of Lynda is that you aren't restricted to one "book" or even one application. it's all there on an "all you can eat' basis.
