I have a Zeiss 21mm 2.8 Canon mount with a Fotodiox Pro adapter to my A7RII
Is this the fault of the adapter being to thick causing the lens to focus early before the infinity stop on the lens?

What do you mean with "focus early"? If you can reach and go beyond infinity (this is more or less normal), then the adapter is too thin. If you can't reach infinity, it's too thick.

If you want to use the distance scale, focus at infinity and put a new marking on the non rotating part of the lens where the infinity symbol lines up. This marking will then be accurate for all distance readings on the scale.

It focuses sharp a little before the infinity stop mark, meaning a thin adapter?

Yes, then the adapter is thin. Most manufacturers do that on purpose to allow infinity focus on any lens, since there are tolerances that will vary from lens to lens.

That could be a lottery. You could try Metabones or Sigma MC-11.

Dose Metabones have better tolerance in precise thickness but still a crap shoot?

You can't make an adapter that will give infinity just at the hard stop with any lens, since the lenses will vary. Therefore almost any adapter is "too thin". It's not a fault, it's a feature.

Why do you need it to hit infinity at the hard stop?

Your concerns are justified; nothing destroys an mage faster than focusing past infinity.

Do 30-40 images at infinity using the focus magnify function, each time note the exact position of the focus ring, they will all be the same. Use that in future, no need to magnify. With this particular lens, focusing a smidgeon short is preferable because it conveys greater depth into the far reaches of the scene even wide open - one of its enduring advantages. A fantastic optic.

I found this that would correct the issue without having to take the lens front off to make an adjustment

Mounts Canon EOS (EF / EF-S) D/SLR Lenses to Sony E-mount mirrorless cameras; infinity focus or beyond guaranteed
Only thing I loose EXIF but gain dead nuts infinity
