My mother-in-law just sprung for a trip to Disney for my daughter's 5th birthday and here are my thoughts...
The photo pass... It's worth it. You can likely take better pics on your own. I certainly did. But it's still worth it.
Bringing a camera along... Bring something small that won't inhibit you. One of the major advantages of FF cameras is the ability to isolate your subject when using large apertures. At Disney, you won't want to do that as context is important for those images. So shooting a fast lens wide open isn't going to give you a memorable image. The other advantage is detail. If it's pretty unlikely that you're going to be printing anything larger than an 8x10 from this trip, don't worry so much about the detail in the image. The content will be MUCH more important and you'll likely be able to focus on the content much easier if you're carrying a small camera.
I say all that having brought my 5D Mark IV, 35mm f/1.4L II, 24-105 f/3.5-5.6, and 600EX II-RT flash with me and I used the 24-105 for literally all but one image and I shot well over half the images at f/5.6 - f/11. The one image I took with the 35L II was indeed shot at f/1.4. My 2 year old son had chocolate all over his face after eating ice cream and I wanted to blur everything else out and focus on that.
So, if you don't have one already, I'd suggest picking up a 1" sensor compact camera. The buy/sell forum here is a good place to land a good deal on a great condition camera at a discounted (versus new) price. There's also eBay, greentoe.com, and Best Buy does a lot of open box stuff (my friend just snagged a Sony RX100 V for $700 which is insane - normally they're $800). I would guess that you'd be a LOT happier with something like that than a D600 + 50mm f/1.8.
With something like the RX100 V you get a 24-70 equivalent focal length, it's stabilized which your 50mm doesn't offer and that will come in handy in certain places indoors, the aperture range is f/1.8-2.8 (FF equivalent of 4.86-7.56 which would have been JUST FINE with me), full manual controls and an EVF so you can see your exposure before taking a picture so your family doesn't have to wait on you to dial everything in and retake several images to make sure you've got it right, a tilting LCD, and it's SMALL. Grab an extra battery or two and you're good to go. Oh... 4k video with AF too! We're actually heading to Busch Gardens in the morning and I kinda just sold myself on buying one. Unfortunately, it won't be here in time! lol
About the only place this setup would be deficient will be meeting characters indoors. I used my external flash for every image except the images of Ariel because I loved the atmosphere in there like it was. I did get better pictures than the photographers in most cases but I wasn't in a single one of them and I do honestly regret that. So if I had it to do over again, and I don't, I'd forget about taking pictures of my kids/wife with the characters and I'd jump in with them. :-(
