What made you decide to shoot at F8 instead of F4 or F5.6?

Everyone is different (of course), but I generally will use f/8 (for a bit more DOF) as long as I can get away with a decent ss (depends of course on subject/action) and iso (depends of course on sensor). For this trip, I also brought along a 5dsR, and for the owls I kept switching back and forth between the two bodies--light was pretty good so for stationary shots the 5dsR was fine at f/8.
