No, I used mine for everything for a year including BIF and then only slowed down after getting a 1DX as I find the 1 series a better camera for my style of shooting.

A higher FPS gives you more frames in a second...that means you might have a better chance of catching that perfect wing position or catching the perfect head angle or the moment the ball hits the bat. However, 6FPS is still very good and most recently I was doing 50% of my bird and wildlife shooting with the 5DSR that is only 5FPS and usually slows to 3-4FPS due to certain factors (ISO, battery life, etc). I have 1000s of wildlife images even with that slow camera. Problems you mention in the original post about blurry images are from poor technique (i.e. tracking the bird) or too slow of a SS....more FPS won't help that at all.

Yes you can, I will post a bunch of images later tonight to prove that you can get great shots with 5D3...I've got F1 cars, I've got BIF and I've got animals (although unless its a cheetah I don't think any camera would have a problem with animals). And I've got 10s of 1000s of them.
I've owned basically every Canon DSLR since the 7D....I will say that I would never choose the 7D2 over the 5D3 unless I was shooting fast BIF (say raptors, swallows, ducks(maybe)) all the time and in good enough light to have SS at 1/1600 and ISO at 800 or less. Otherwise, for any other type of shooting I would use the 5D3 all the time.
I sold my 7D2....I haven't replaced it yet and don't regret selling it for a second. There are people who love the 7D2 but there are also a lot of members on here who have years of wildlife experience who have found the 7D2 to be the biggest headache of a camera (because of sporadic and bipolar AF) that we've ever used.
I really wouldn't recommend the 7D2 to anyone at this point in time. I'd actually recommend Nikon D500 and 200-500 as a birding setup for BIF and other birds/wildlife but that isn't your main interest either so I'd ignore that option also.
