Depends on what you shoot. No camera does everything great, so if you do multiple different things then you'll likely want multiple bodies with their own strengths to counter the weaknesses of the others. I view bodies the same as lenses, different ones for different jobs.
Me personally, I have a D610 that is great for most general things, including ecommerce, static portraiture, headshots, etc. I also have a D800e for detail work, beauty, and the oddball client that is impressed by megapixels. I have a side job that requires me to travel around and take quick documentary photos of stores/businesses, so I got a cheap Panasonic GF2 mirrorless which allows me to travel light and ride my motorcycle to and fro.
Eventually I want to start shooting sports, so I'll likely have to get a D500 or D7200 somewhere down the line next year, and I would like a "better" mirrorless option for low-key (read no permits on location) model-tests and shoots where I need better overall IQ and performance so I'll probably get a GX85 or the likes soon too. At that point I think I have all my bases covered, but I could see the need for more if I did more things haha.
I actually know a couple photographers with 3-4 bodies that all serve different purposes, including one who has a 5D3, 7D, one of the cheapie Rebels (Tsomething I), and a Fuji X100, and another with an A7R, A7S, A7II, A6000, D600, and D7000...so I guess I'm not alone in my thinking.
