My favorite is 5:4 as it enlarges for 8x10 or 16x20 prints with no cropping needed and very little with an 11x14 print. Saves a lot in matting and framing expense.

I tend to take at the cameras default ratio & stitch or crop as required to get the image I want. In at least one case a panorama's ended up more than 10:1 while other shots will be cropped to 1:1. I can't think of any portraits that are taller than 3:2 but I've probably got some somewhere.

Some shots such as this one of the members of my club just don't work in anything but 1:1

I use the default 4:3 ratio as cropping in-camera is a bad idea ... but I would crop to various different sizes in LR/PS depending on the ratio that I think works best for that particularly image. For portraits I would generally prefer a 3:2 ratio as this format makes the subject appear a little slimmer.
