I think if it is your first time with the new AF menu (first released in 1DX/5D3) then I would really just leave everything on default to start out with and see how it goes. I fiddled with the AF settings for ages and then just went back to Case 1 defaults.
I'd use AF expansion mode with either 4 or 8 points around the selected point. You could also try the zone mode which will try to focus on the nearest subject (that may or may not be good in your football use case?)
After trying the defaults I'd look at the descriptions of the 6 cases Canon has added as presets. One of those may work better for football depending on if you have lots of distractions coming in front of your intended subject.
Instead of the regular manual, have a read of the 1DX AF guide which is much more thorough...
