I would second the point about ergonomics - I have a D800 and D7100(for reach) and find shooting with the D800 much more instinctive simply due to familiarity. I do envy the flippy screen on the D750 and I think this could be a big plus for unusual angles (when lying down in the street may not be an option) and it means that a solid table tripod - like the Leitz one - becomes a a viable option for those nigh or twilight shots.

Personally I would also want to take my 18-35G (<14 oz.) and some sort of decent P&S so I could leave the DSLR behind when going out for dinner and still grab a shot if I wanted to.

Thank you all for your insight.
I have a little time before leaving and can make a final choice.
They are all excellent thoughts and points taken.
I do have my eye on the 18-35G for the wide shots or a fixed wide prime.

The D750 sits in the hand much better, is smaller, and it would be my choice

The difference in weight is 5 ounces. Really not even worth considering.

I would do the D750 with the Sigma 24-105. Lightweight matters when hours and days are on the line. To me, the D810 is heavy. To you, it may be another story. I'm weak and straggly.

I would take the D810 and have the advantage of the large file sizes for landscape and city scenes over the D750. I have both cameras and the D750 autofocus advantage I have only seen with my f/5.6 telephoto zoom lenses. No problems with f/2.8 zoom lenses at all with the D810.

I can only speak about my copy of the 24-120mm lens but I was not impressed at all with its mediocre image quality in the 24-70mm range when comparing images shot with the same camera and the two lenses. I would expect the Sigma to be the sharper lens.

Even with the built-in flash of both cameras I would recommend taking a CLS type flash (SB-700/800/9xx) as it will greatly improve shots in dark interiors where there is often such a wide dynamic range that only with flash will you get the best possible pictures.

In the past I have taken a 16mm f/2.8 fisheye and it has been valuable. A wider lens like the Nikon 18-35mm would also be a good addition to the longer lenses.

I have a 28-300mm that is my carry around lens, and it couples well with both cameras

I don't see enough of a difference between these cameras that it matters which one you take.

If it was a P&S or mirrorless vs. either of these choices I think weight and size might be more of a factor....

Yup. This fallacy of higher MP cameras suddenly creating worse results when used at the same shutter speeds just never seems to die.

No matter what anyone says... D810 has the advantage during the day. D750 is better in lower light (I say ISO 6400+). If money is not an issue and you don't plan on going past iso 6400, D810 is your choice. Else chose the D750. 24-120 f4 is an excellent walk around lens. Take that and a wide angle (14-24 is magic in my opinion) and you probably won't be disappointed.
