I have the same bodies and usually opt for the D750 when visiting France. Why? The main reason is weight and size. I favor the D810 but the smaller camera is more convenient in the smaller bag (Think Tank Urban Disguise 30) I have for travel when I want to be more discreet.
I rarely do need the cropping ability of the 36 mp files when traveling so the 24 mp files are perfectly ok.
Make sure you are used to the body different interfaces though. The D750 was new to me last September in Paris and I didn't realized Nikon had reversed the placement of the bracketing and flash exposure compensation on the D750 compared to the D810. I mistakenly turned bracketing when I wanted to adjust flash exposure and though the camera was going down on me with huge sweep of exposure reading between frames.
Aside from this I never regretted leaving the D810 home.
I highly recommend to take a light tripod with you though. Paris is fantastic to photograph at twilight and at night.
The 24-120mm zoom should serve you well and would happily be joined to a fast prime especially for street photography to isolate your main subject(s) from the always present crowd.
I am obviously more familiar with Paris but London is also great. Both offer unique cultural views, so different from the US. Shooting opportunities abound....Show more →
I would second the point about ergonomics - I have a D800 and D7100(for reach) and find shooting with the D800 much more instinctive simply due to familiarity. I do envy the flippy screen on the D750 and I think this could be a big plus for unusual angles (when lying down in the street may not be an option) and it means that a solid table tripod - like the Leitz one - becomes a a viable option for those nigh or twilight shots.
Personally I would also want to take my 18-35G (<14 oz.) and some sort of decent P&S so I could leave the DSLR behind when going out for dinner and still grab a shot if I wanted to.
Have a great trip!
