It has to do with personal safety. The open eye that's not up to the viewfinder may be diminished but is still sufficiently "awake" to warn of motion nearby. I know of a TV cameraman killed covering a car race because the camera blocked half his field of vision and he was unaware of the tire flying toward him until it was too late.
Both eyes open for safety.

For me, it's both eyes open ... (I am also left eye dominant) ...
... Not only for safety, but this style allows the next frame(s) to be planed by "seeing" developing action.
Helps getting a "3D" perspective of events and "goings on" around you ....resulting in being more involved and getting a feel for what you are capturing ... for me anyway ...
