What do you call this effect? I am sure there is some academic word in the graphic arts....

I used LightRoom... a bit of a pain to paint around the subject, but with enough beer, anything is possible.

2. I used the Radial Filter for this one... easy to do.

Bud Light ? Your 2nd shot appeals to me. The first is a close 2nd if the bg were somehow different.

Thanx Ted..... I found Pilsner Urquell to be my creativity enhancer of choice. I tried vodka once and while the creativity really flowed, I found my composition was a bit off. Below is a picture I took of a guy trying to ride a bicycle in a snow storm last winter.... what is funny is the parked car in front of him. Yep, vodka does get the creativity going!

Wine is my beverage of choice when editing. Very creative with the selective coloring. The second is my favorite.

usually called spot color or selective coloring. typically used to bring attention to the item/subject you leave in color. I think these would be more effective if the bw areas would "pop" more-they look too dark to me and very low in contrast. I think you'll find most photographers don't like the spot color look, but I get a request for it from time to time from my clients. I typically accomplish it in PS and make several layers and that way you have control over the different elements especially if you want some items more saturated than others. also easier to undo something.

Thanx for the feedback..... that is the difference between a rookie, me, and a pro, you. Rookies think if a little is good, then more!
