I have a pair of top end 27" iMacs both with max RAM. One has the 2GB graphics while the other was BTO to the 4GB version. My partner uses the 2GB version and she is a casual photographer so doesn't push the graphics very hard.
In both cases we are running Lr 5.7.1. When I go to work with/help her in Lr depending upon the operation I can detect her machine responding slower to things that would seem to be GPU intensive. Nothing scientific about my observations, but it does seem there is at least a small edge with more VRAM. Is it enough to be worth the extra $$? <shrug> Can't say, but I hate to wait on anything.
