I switched from a 5Dii to a D600 last year, so I think I can chime in well on this subject. The biggest aggravation for me about the canon was its pathetic AF. The D600 is fairly better, but about the same in low-light situations. As far as IQ, I do not see too much of a difference at lower ISO ratings, however, I never liked going past 5000 on the 5Dii, and I go to 6400 on the nikon.
I prefer the ergonomics of the 5Dii, and I felt safer in the rain with the canon as well. I've dropped the 5Dii in water and onto concrete many times, and everything worked fine. My nikon broke on its first 3-foot fall and spent 6 weeks in the shop because of it.
I shoot 50/50 video, and the fact that I cannot change aperture in live view with the d600 drives me mad. The footage is sharper, but it's more of a hassle to acquire. Canon's battery grips drain both batteries at the same time, and nikon uses one after another. What this means is that the first nikon battery will die while recording, and you'll lose the footage. When Canon batteries die, it saves the footage before shutting down. Big life-saver.
All in all, I wouldn't switch from Canon just for the d600. The D750, however, is an entirely different story, so if you are sure about the switch, I recommend saving your cash for now and getting that powerful beast.
