Now for someone doing landscapes and studio portraiture, the D800e might be a better deal. A D800e can be had for less than $1500 these days while a D810 costs about $2500 on FM. That's $1000 that can go to glass, tripod, strobes, ect.
Don't know whether the D800E is a good choice for portraiture, or the D810 for that matter (or even the D800)
Though I love the (with the correct shooting technique and lenses) incredible sharpness and detail rendering of those bodies (I have the D800 myself, with lenses like eg the 2/200VR and 2.8/70-200 VRII), I fear that for some portraits (beauty, or at least the for the sitter flattering kind) the ruthless reproduction of pores, wrinkles, facial hair etc. may sometimes prove to be too much.
Sure, special 'portrait' software or simply some Photoshop will help repair the 'damage', but that IMO would kind of defy getting a camera with all those pixels and such detail rendering.
On a side note, the same problem existed in the film days when you did a shoot on a Hasselblad compared to shooting on 35mm, especially on eg Panatomic X under studio lighting. Hasselblad has a solution though, they also sold excellent be it expensive Softar filters .
