I'm glad that you had a good time at LD 14. The eagles sure put "on a show" for all of us.
Do to the various lighting conditions and the movement of the flight of the eagles, photographing at the Dam can be quite difficult. I'm not a Nikon shooter, but have heard that the D810 is a super camera.
I'm not a pro, nor do I have all the answers, but to start off, you might want to put your camera in Aperture Priority, with the f/stop wide open, ISO from 400 to 800, and over expose to the right about 2/3, and adjust to maintain a shutter speed of 1/1600 to 1/2000. These settings are a good start. You can then change them as needed after viewing the histogram and photos on the camera's LCD screen.
Some of the noise that you experienced could be from the particulate matter in the air.
