The D700 has a 1/8000 max shutter rated to 150k cycles. The D600/D610 have a 1/4000 max shutter rated to the same life. D700 has 1/250 sync, the D600/D610 is 1/200 sync. Dunno how you get a better shutter from a clearly lower spec unit with less capability. Only advantage the D610 has is the Quiet shutter mode.
The D700 has a much better grip design than any of the later Nikon bodies except the D750, the D600/D610 have a very shallow grip. The D700 also retains the separated AE-Lock and AF-On buttons and the pro style mode settings.
The only aspect I commented on that could be attributed to personal preference is ergonomics, and even then most users of both bodies would agree with me.

Well your first point is simply not true. You can keep telling yourself that, but it does not make it so.
Second point on the shutter. Yes the D700 has higher specs mechanically but it also has scared more critters off for me than I can remember. The D600 has a muted click instead of the D700 loud "Ker-Clunk".
I would like a dedicated AF-ON button, but really how hard is it to use the AE? Not hard at all. And "pro" style setting? Meh
Shallow grip compared to the D700? Yeah it is, but so what? I have large hands and I prefer the D600.
Lastly virtually EVERYTHING you have listed can be attributed to personal preference with the exception of IQ and in my opinion the D600 is "better"
I still have a D700 and guess what? It is a good camera, maybe the best Nikon has ever produced (personal opinion) but sorry overall at least for me the D600 is still the better value and a better performer, but then again you assured me that most everyone will agree with you, so I guess that is moot.
I guess at the end of the day it's up to the OP to decided what is best for them but to definitively state that the D700 is FAR better than the alternative is just wrong.
