I have not shot or really compared the images from any of the RX100 cams to the RX1. But the RX1 has a higher performing lens and a full frame sensor instead of a 1" (2.7x crop) sensor. So I would be willing to bet that the RX1 is much better in low light, for high dynamic range, larger print/viewing size, sharper lens, better for shallower depth of field shots. The RX100 series will do great (comparitivly speaking) in good light if you want greater depth of field and aren't planning on printing too large.
I am also looking for a small P&S for an upcoming europe trip. My list that I am looking at: RX100, RX100 III, yet to be announced Panasonic LX8 and yet to be announced Nikon P8000. All of which either use or are rumored to use a 1" sensor. Problem for me is that the LX8 and P8000 likely won't be announced let alone available before I leave in early September.
Right now the RX100 III is the more interesting option over the original RX100. For me there are three compelling upgrades. Wider lens at 24mm vice 28mm, articulated LCD, and popup EVF. Downside being that it is much pricier and its value will drop fairly quickly. So I still haven't decided.
Also, if you're also looking at earlier cameras as well you could also look at a Panasonic LX7. It has a smaller sensor (lower resolution, less dynamic range and poorer high iso performance) than the RX100 cameras but is very well regarded for its controls and operations. It is also cheaper (though a little larger) than the RX100.
