Yeah, it's really an asset in this run 'n gun type coverage to have someone just concentrated on placing the light. Ideally, i'll bounce the on camera flash off a wall to the side of the subject while I get a nice hairlight from off the side and above eye level. I prefer the wall off the side because it gives a little direction to the light and shadow, and bcause it's coming from the side, it won't make "bandit" eyes, like would happen from light that is coming from above mostly. It's not complicated, basically crosslighting, or 3-point lighting without the fill light, as follows:

If I don't have walls, I'll use a flashbender on the camera; it's a little too on-axis, but I prefer that to the bandit eyes. I actually usually 1/2 CTO the light on the stick as well, forgot to mention. It's a little cheesey walking around with a sunset on a stick, but I like it.
As a side note, I've heard Lindsay Adler mention she would use this type of light on a stick trick when she did events before her portrait/fashion career took off.
As far as the DEMB modifiers, they are a little smaller than the large Flashbender that I use if I don't have walls (the panel ends up being 10"x11", the largest DEMB part I saw was about 7" square). Though, it probalby doesn't matter much at distances of 4-5ft.
