I shot a wedding with Evan Baines a few years back. He did a great job of explaining the different parts of the day in the post. I still reference it when I shoot Indian weddings (like this past weekend):

I've done two. The ceremony itself is quite long and composed of many distinct parts. There's a lot of symbolism within it that the clients often feel is important to capture. For example, during one part of the ceremony they circle a fire pit (seven times I believe it is) each time touching their toe to a stone on the ground. Having a good understanding of that sort of thing is useful. I'll PM you with a link to a useful PDF I have.

The comment above about being prepared for lots of groups is a fair one. Not all Hindu ceremonies are this way (from what I can gather) but I didn't gel hugely well with my first Hindu clients because they basically forgot that they'd hired a PJ and we spent the whole day doing groups. It is the only wedding I've ever shot in my entire life during which I ran out of memory. I had to start offloading DURING the day!

Its also important to pay sufficient attention to the elders (Parents/Grandparents and the older generation in general).

One other thing. If they're having a mandap (ceremonial wedding tent) or an area that represents a mandap, you'll probably need to remove your shoes if you're planning to shoot within it's confines.

I wouldn't. They're great fun, super colorful, and the food is amazing.

For something like this, I'd approach it as more photo journalistic. You don't necessarily have to understand each part of the ceremony to be able to take good photographs of it. A little understanding of the culture can be helpful, though not absolutely necessary.
