I am thinking about a Mark III purchase. What kind of configurations can be done with the dual media slots? Can the camera be setup to record photos to the CF, but videos to the SD, for example?
No it can't. You can record to multiple for back up (RAW / RAW or Jpg / Jpg), Record separately RAW to one card and jpg to the other or record to the CF card and use the SD card for overflow (standard).
I use my 5D3 a lot for traveling. I configure the CF card to hold the full raw images and the SD card to hold a lower resolution jpeg. I can then download the jpegs easily to my iPad during the trip to show family and fellow travelers without taking up iPad memory with a lot of large image files.
The one downside I've found is everyone wants to see the vacation pictures when you first get back and get handed the iPad. By the time you work up all the images in Lightroom to make them the best they can be, no one is interested any more.

You can of course manually change to the SD cards every time you shoot a video. So you get all videos on that card. It will take you 2 seconds to do that
