Probably posing is way off, since this is my first time telling someone what to do and how to position, she was really nervous in front of the camera, but I tried to get her to relax.... but still I think we could have had better poses.

Others hit the nail on the head. Shooting from eye level or above will be much more flattering, especially those who've experienced a few more years of gravity.
For composition, the best advice I can give is KISS - keep it simple stupid! - I mean this in the most lighthearted way possible - If elements of the background are not adding to the image - blown highlights, shrubs, rocks with graffiti, etc. - take a few steps and remove them from the frame. As a general rule, light subjects should be paired with dark backgrounds, and vice versa.
