I don't think you need anything more than your D800e, personally.
I mean, unless you want to blow a bunch of cash, the D7000 is no resolution improvement, no autofocus improvement, no buffer improvement, and only one more FPS (assuming shooting in DX mode on the D800e). The D7100 is more resolution, but no improvement to the AF, and again, step down in buffer...
I'm not sure how much you'll actually gain with a second body. 5 fps vs. 8 fps on the D300, but a also substantial step down in autofocus speed, high ISO performance and dynamic range, and for that you're spending many hundreds of dollars.
