Any recommendations on where you can buy wooden panels/frames like these? Also looking for recommendations on fabrics that are not nylon/rip stop. Are these frames easy enough to just make on your own(may be a dumb question, haha).

The panels in the photos are probably 1/4" and 1/2" foam core which can be found at art supply outlets. Another alternative is foam insulation panels from a hardware store painted white.

For fabric flats the most economical approach is white muslin which is widely available in 9' and 10' rolls. When I bought some to make background a few years ago I found it at Walmart. Black king size flat sheets from Walmart are also what I use for black background and as drapes on the walls to kill unwanted spill fill. One stop shopping....

The wooden panels look like they are home made and are using tracing paper Velcro'd on and some look like they have white plexi clamped on to the frames. The plexi will make a more even diffusion and the tracing paper would be less diffused but stackable to get the effect you want. Plexi would be very even for transilluminating the big duratrans images they are using for the backgrounds.

If you have the tools the frames are simple to build.

Visit an art store like Blick for one-shop shopping: canvas frames (with or without canvas preattached), vellum (shoot through), white paint for matching color temps (if bouncing off canvas). The frames tend to be substantial, so you can screw a mount point into the wood, or use a clamp (I like the Matthews Gaffer Grip). Of course, you'll want the usual stands and grip gear.

Expensive set.

As for a low density diffusor I use Rosco / Lee "White Diffusion", for high density (aka white plexi) Translum (by Savage).
