Are you merging multiple images to create an HDR image? Once combined I don't think multiple F-stops, shutter speeds, etc, can be displayed in standard EXIF data fields.

Please reword your question. "change the HDR of the image" does not make sense.
Are you referring to an in-camera HDR that you process in DPP? An HDR produced by DPP which you then use DPP to process further?
You can make an HDR image (High Dynamic Range image) if you shoot multiple exposures of a high dynamic range scene and combine the exposures. You can change the contrast of an image or change the contrast of an image generated by combining exposures, but that is not "changing the HDR".
The DPP manual says "Image information is not appended to an HDR image."
If you save the file as a TIF in DPP it will have little to no metadata
for some reason DPP does not save much metadata in TIF. It also strips GPS data in TIF.
If you save as EXIF JPG it will have metadata & GPS data.
