So I am confused. Are we talking about the GM5541, which is a monopod rated at 50 pounds load, or are we talking about a 5 series tripod? There is no current Gitzo tripod with "5541" as the numerical part of the model number, and your post mentions monopod in the text, so my guess is you are talking monopod.
Assuming we are talking about a monopod, I would suggest you forget about using a ball head of any kind, and just get a monopod head like one of the versions of the Really Right Stuff MH-01 tilting monopod heads. On a monopod, ball heads are more difficult to use that a monopod tilt head, plus they cost more for a similar load rating.
I am very happy with my Gitzo GM3551 monopod combined with the RRS MH-01 tilt monopod head. The lens I use the most on that monopod setup is the Canon 300mm f2.8 L IS, which is almost the same weight as the 200mm lens you mention. Also note that with the GM3551 monopod, you do not need to extend the smallest section at all on level ground unless you are well over 6 feet tall, so you get the performance of a 4 section monopod except for the occasional times when you need more length.
