Will I notice a big difference between shooting at 50mm vs the 70mm of the 70-200?
Beyond the difference in the focal length, you'll notice a huge difference in ISO performance of the XTi. After switching from 35mm SLRs to a decade of digital P&S, I switched again to DSLR several years ago, starting with the XTi (with a long series of annual upgrades to the 7D, 1D4, and 5D3).
ISO 1600 on the XTi will not compare to ISO 1600 on your 7D. I predict you'll want to stay at or below ISO 800, which renders gym shooting almost impractical, even at f/1.8. The XTi was a suitable camera at the time (circa 2006) and my youngest son still takes decent pictures with it, but since you're used to the 7D, the XTi will seem a huge step backwards.
And depth of field at f/1.8 is much thinner than you're used to at f/2.8, so nailing focus on the subject's eyes is critical. Unfortunately, the XTi's focus acquisition and AI Servo tracking is also a bit dated, significantly slower than your 7D.
