I have the Canon 5DII. I have the following lenses:
Zeiss 21f2.8
Zeiss 35F1.4
Canon 70-200F4 IS
I also thought I would try the Nikon D600 with:
Nikon 24-70F2.8
I am primarily a canon shooter.........and been thinking of selling the
Nikon gear. In its place I might get the Canon 5D MK III and the 24-70 F2.8 MK II.
I am going to B&H tomorrow to get a thorough understanding of the Canon 5D MK III.
I like landscapes.......think "Great Wall". I also like portraits and architecture.
People are very curious and will stare as soon as you appear and then hide as soon as camera comes up to your eye. I found 70-300 DO without hood very inconspicuous. Also 17-40 great when close in as people don't think it's pointing at them.
Watch out for theft of gear in crowded areas. Best to keep gear low profile as much as you can and be careful of easily opened bags.

mostly used the 35, 21 for some landscapes and 100 for some people pics. in my bag i also had my 1D2n and 70-200/2.8 IS because i'd used them at the singapore formula 1 the week before i went to nam. but i didn't use those at all and usually left them in the hotel/hostel haha.
so if that was me i'd be more than happy with your kit of

i'd leave any other gear at home.
i'll post my gallery when i get home to show you how i faired with a simple kit of 1 body and 3 primes. never once did i wish i had a 24-70.
I'm not sure what you would gain with a 5D3 instead of a 5D2? I'd get a 24-70mm II...as changing lenses in Beijing and VN would invite a lot of dust inside your camera.
For this kind of trip, I would definitely take the Canon + 3 lenses kit you have there. I often travelled with some variations of it, and found it immensely successful.
