Lynda.com has a number of Illustrator tutorials. However, Adobe Indesign is a much more powerful program for doing work that will be printed. Illustrator is excellent for creating graphic elements for the publication, but Indesign will handle the design of the publication a lot better.

There's about a million of them for free on-line. The first place I would look these days is on the video hosting sites. Afterward or at the same time I'd start perusing the on-line communities dedicated to A.I. - last I checked there were a bunch.
