Any suggestions? I'm chasing a proper course, not bits and pieces off Youtube, for preference. (Going to work on it over Christmas, get something out of the time.)
I know there are a heap out there (e.g. Gry Garness, Lee Varis on creativelive, Slickforce, etc) - any experience with them?

Kelby Training has several portrait retouching classes from a variety of instructors.
Also, I understand you aren't looking for "bits and pieces" but have you viewed the video tutorials that Lee Varis has on his site? He has some impressive skin-smoothing techniques there available for free.

look up phlearn. That's the best resource I've ever seen. The kelby stuff is quite amateurish by comparison and scott kelby's photography and beauty retouching is not very good.
