Well, in my own testing, I've found the color indistinguishable between the D700 and D600, especially in the reds, where things always go south faster (with particular concern for skin tones).
As it stands, though, I have a D7000 that sits collecting dust and losing value because my wife now has a D700 as her main and we just never use the D7000. Plus, I dislike the images that my copy of the D7000 produces.
Speaking of color issues, I never had much luck doing a match for a session where I used a D700 and D7000 side-by-side. The D7000 gave me many great shots, but caused me a lot of work, especially with them reds.
