I'm feeling the same with the 2x II vs. III on my 500/4L IS Mk I, but I don't often use the 500 + 2x for dynamic situations. For static situations, the Mk III is better (period). I haven't noticed an accuracy difference for dynamic subjects with the 1.4x III on my 500/4L IS Mk I, which I often use.
For me, the biggest "step forwards" has been the 1DX - it's awesome for dynamic subjects, even at very high ISO in very low light (despite recent comments on a recent thread). It's OK for static subjects, too (just kidding - it's awesome here, too).
