Hello,
Soon to be moving into new place.
One room will be used exclusively as the printing and post processing work room.
What color of paint do I want the room to be?
I was thinking a flat, NON gloss, white.
Though, perhaps a neutral gray would be better?

18% gray. Any shade really but gray.

Lighter than 18% because dark rooms are oppressive. Just adjust the lighting and down for print evaluation and editing, respectively. Proper lighting is the more significant factor.

As Waycool stated, you want the walls to be neutral. You don't want a strong color, which could sway your judgement of neutral. As RDKirk mentioned, lighting is also very important. Years ago I had a lab that I worked in which had fluorescent ceiling lights. We painted the walls a light gray and put in 5000K fluorescent tubes in all the lights. While we still used a viewing box for critical viewing, it helped that the ambient lighting was the correct color temperature. The primary difference between inside & outside of the viewing box was the amount of illumination.
