I have a new epson r2000 photoshop cs5 extended, i mac OS X 10.6.8.
Cant find instructions anywhere.

Instructions for what? installation, setting up, printing the epson website has most of the info on installation on a mac

I have the set up instructions, cant find operating instructions anywhere, ie set up paper choices print quality ink levels paper sizes.

Standard OS dialogue print panel let's you decide on the options, or am I missing something you want to know.

there is always a Page Setup dialog that sets the paper size and often which input tray/method for the printer (and borderless printing too). Other than that, as William
said, it's all in the std. OSX print dialog. I'd suggest getting some 5x7 Epson Lustre paper and experiment around (it's fairly inexpensive)
