Same here, Henrik - I like the 7D's files a lot.
About the only subtantive change I've had to make to my workflow is to back off a little on the output sharpening - and that's a nice change to have to make, because the files are inherently a little sharper than my 40D's files (or rather the 7D is resolving more detail, so less sharpening is needed to bring the detail out).
I can see a slight "texture" in the sky or in OOF water sometimes, but I see much the same in my 40D files too - there's as much "noise" in this (I think 400 ISO) 40D shot as there is in my 1250 ISO Turnstone above:
7D "noise" just ain't a problem if you give the files a chance, and I've realised that I actually prefer it to the smooth background I dialled into this 40D shot:
